Watkins Recipe - Chewy Chocolate Chip CookiesChewy Chocolate Chip Cookies
Just in time for lunch boxes! - From Watkins Website
  • 4 1/4 cups/1060 mL all-purpose flour
  • 1 tsp/5 mL baking powder
  • 1 tsp/5 mL baking soda
  • 1 1/2 cups/375 mL butter, softened
  • 1 1/4 cups/310 mL sugar
  • 1 1/4 cups/310 mL firmly packed brown sugar
  • 2 eggs
  • 1 tbsp/15 mL Watkins Original Gourmet Baking Vanilla
  • 12 oz/340 g chopped chocolate or chocolate chips
  • Coarse Sea Salt, grounded (optional)
Heat oven to 375°F/190°C. Combine flour, baking powder and baking soda in medium bowl; set aside. Combine butter, sugar and brown sugar in a large bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla. Continue beating, scraping bowl often, until well mixed. Reduce speed to low. Gradually beat, adding flour mixture, until well mixed. Stir in chocolate chunks. Drop dough by rounded tablespoonfuls, 2 inches/5 cm apart, onto ungreased cookie sheet. Bake for 12 to 15 minutes or until golden brown. Sprinkle with sea salt while still warm.

Makes 3 1/2 dozen.

Watkins Recipe - Quick & Easy Chicken Chow Mein
Quick & Easy Chicken Chow Mein
From Watkins "Jiffy Dinner" Cookbook, 1990
  • Watkins Cooking Spray
  • 2 boneless chicken breast halves, skinned and cut into 3/8-inch/1-cm cubes
  • 1 cup/250 mL chopped onion
  • 1 cup/250 mL chopped celery
  • 1/2 cup/125 mL chopped green pepper
  • 1 package (16 oz/450 g) frozen oriental-style vegetables, thawed and drained
  • 2 tbsp/30 mL low-sodium soy sauce, or to taste
  • 1 tbsp/15 mL Watkins Chicken Soup Base
  • 1-1/2 tsp/7.5 mL Chicken Seasoning, freshly ground
  • 1/2 tsp/2.5 mL Chili Powder
  • 1/2 tsp/2.5 mL Watkins Onion Powder
  • 1/4 tsp/1.2 mL Watkins Ginger
  • 1/8 tsp/0.5 mL Watkins Black Pepper
  • 1-1/2 tbsp/22.5 mL cornstarch
  • 1-1/2 cups/375 mL water
  • Soy sauce (optional)
  • prepared rice, rice noodles or mung bean sprouts (* see below)
Coat large skillet (or wok) with cooking spray; heat. Add chicken cubes; cook 5 minutes. Stir in onion, celery and green pepper; cook stirring constantly, 5 minutes, until vegetables are tender. Stir in oriental vegetables and next 7 ingredients; cook 1 minute. Combine cornstarch and water; add to skillet; continue to cook, stirring constantly, until thickened and bubbly.

* Serve over rice, rice noodles, or add 4 cups/1 liter of mung bean sprouts to the pan at the very end and cook for an additional 1-2 minutes, stirring constantly until they are softened just a bit and coated with sauce.

Makes 4 servings.

Watkins Recipe - Salmon LoafSalmon Loaf
From Watkins Cookbook, 1948

  • 1 can (1 lb/454 g) salmon
  • 1/2 cup/125 ml cider vinegar
  • 1/2 cup/125 ml bread crumbs
  • 1/8 tsp/1.2 ml Watkins Black Pepper
  • 1/2 tsp/2.5 ml salt
  • 2 egg yolks
  • 1 tsp/5 ml Watkins Parsley
  • 1 tbsp/15 ml lemon juice
  • 1/2 cup/125 ml hot milk
  • 2 egg whites
  • 2 tbsp/30 ml melted butter
Remove skin and bones from salmon - add all ingredients except egg whites and mix well. Fold in stiffly beaten egg whites. Bake in butter mold, in moderate oven (350 F/180 C) for 1 hour. Sprinkle with Paprika before serving.

Makes 8 servings.

Watkins Recipe - Apple Romaine SaladApple-Romaine Salad
  • 3 tbsp/45 mL fresh lemon juice
  • 2 tbsp/30 mL honey
  • 1 tbsp/15 mL cooking oil
  • 1 tsp/5 mL poppy seed
  • 1/2 tsp/2.5 mL Watkins Onion Powder
  • To taste, freshly-ground Sea Salt, freshly gound
  • To taste, Lemon Pepper, freshly ground
  • 4 cups/1 L torn romaine lettuce
  • 1 cup/250 mL coarsely-chopped red delicious apples
  • 1/3 cup/80 mL coarsely-shredded carrots
In small bowl, combine lemon juice, honey, grapeseed oil, poppy seed, onion flakes, salt and lemon pepper; refrigerate until serving time. To serve, place lettuce in large salad bowl; top with apples and carrots. Toss with dressing.

Makes 4 servings.

Watkins Recipe - Luscious Apple PieLuscious Apple Pie
From Watkins Cookbook, 1936
  • 1 cup/250 ml "top milk" or cream
  • 1/2 cup/125 ml sugar
  • 2 egg yolks
  • 1 tbsp/15 ml flour
  • 2 large apples, cut fine
  • 1/4 tsp/1.2 ml Watkins Cinnamon
  • 1/4 tsp/1.2 ml nutmeg
Mix milk, sugar, flour and egg yolks thoroughly. Line pie tine with pastry (see below for recipe) and add apples and dot with butter. Cover with mixture. Lattice with pastry strips, bake until apples are tender (start in a 400 F/200 C oven and turn back to 350 F/180 C after 15 minutes; continue baking until done)

Watkins Recipe - Pie CrustPie Crust
From Watkins Cookbook, 1936

  • 1-1/2 cups/375 ml flour
  • 1/2 tsp/2.5 ml salt
  • 1/4 cup/60 ml lard (or shortening)
  • 1/4 cup/60 ml butter (or margarine)
  • 1/3 cup/80 ml (or less) ice water
Sift dry ingredients together and work in chilled shortening lightly. Add ice water slowly (a couple of spoonfuls at a time) and roll on floured board. Line pie tin, have dough well over the edge of the pan. If making a double-crust pie, double this recipe, place the top crust on, then pinch edges and trim.
