Watkins Recipe - Leek & Sausage SoupLeek & Sausage Soup
Did you know that "sausage" covers everything from salami to knockwurst to bologna? Whatever type of sausage you choose the ingredients in this soup will make a delicious background for it.
  • 1/4 cup/60 ml carrots, sliced
  • 1/4 cup/60 ml celery, sliced
  • 1-1/2 cups/375 ml sliced leeks (about 3 leeks cut into 1/2 inch pieces)
  • 1-1/2 cups/375 ml diced potatoes
  • 1 cup/250 ml (about 1/4 pound) thinly sliced kielbasa (if not available, use knockwurst or Oktoberfest style sausage - use pork, beef or turkey sausage)
  • 1 tsp/5 ml salt
  • 1 tsp/5 ml poultry seasoning
  • 1 tbsp/15 ml Watkins Chicken Soup Base
  • 3 cups water
  • 2 tbsp. flour
  • 2 tbsp. butter
Combine all ingredients except flour and butter is slow-cooker. Cook on low for 5 hours, or on high for 3 hours. To thicken soup, remove 1/4 cup liquid and combine with flour and butter. Return mixture to cooker.

Makes 5-6 servings

Watkins Recipe - Borscht
Borscht
Although there are endless variations of this world-famous soup, the only ingredient that is common to them all is beets! Beets supply the characteristic red colour.
  • 2 stalks celery, diced
  • 2 carrots, chopped
  • 2 leeks, sliced
  • 1 white turnip, diced
  • 1/2 small cabbage, cut into chunks
  • 3 beets, diced
  • 1 large onion, chopped
  • 1 clove garlic, crushed
  • 1-1/2/1/2 kg pound stewing beef, cut into 1-inch/2 cm pieces
  • 1 tbsp/15 ml Watkins Parsley Flakes
  • 1 bay leaf
  • 1 tsp/5 ml salt
  • 1 tsp/5 ml sugar
  • 1 1-pound can tomatoes, with juice
  • 1 beet
  • 1 tsp/5 ml Watkins Beef Soup Base
  • 1 cup/250 ml water
  • 1 tbsp/15 ml wine vinegar
  • Sour cream
Combine all ingredients except last four in slow-cooker. Cook on high for 2 hours, then switch to low for 9 hours.
Grate 1 beet or cut in julienne strips. Simmer in 1 cup beef stock and 1 tbsp/15 ml vinegar for 2-3 minutes. Add to soup.
Serve borscht with generous dollops of sour cream and a thick, crusty European-style bread.

Makes 6 servings.

Watkins Recipe- Italian Cream Cake with Cream Cheese FrostingItalian Cream Cake
with Cream Cheese Frosting

  • 5 eggs
  • 1/2 cup/125 ml butter or margarine
  • 1/2 cup/125 ml vegetable shortening
  • 2 cups/500 ml sugar
  • 1 tsp/5 ml baking soda
  • 1 cup/250 ml buttermilk
  • 2 cups/500 ml all-purpose flour, sifted twice
  • 1 cup/250 ml coconut
  • 1 cup/250 ml chopped nuts
  • 1 tsp/5 ml Watkins Vanilla
  • 1 tsp/5 ml Watkins Coconut Flavour
Separate eggs and beat egg whites until stiff; set aside. Cream butter, shortening, and sugar. Add egg yolks, one at a time, beating well after each addition. Dissolve soda in buttermilk; add alternately with flour. Beat well; add coconut, nuts, and extracts. Fold in stiffly beaten eggs whites. Pour into 3 bottom-greased and floured 9-inch/23-cm cake pans, using 2 cups of batter for each pan. Bake at 350 F/180 C for 25 minutes.

Cream Cheese Frosting:
  • 1 package (8 oz/225 g) cream cheese, softened
  • 1/2 cup/125 ml butter or margarine
  • 1 box (1 lb/454 g) powdered sugar
  • 1 tsp/5 ml Watkins Almond Extract
Combine ingredients and beat well. Spread between layers and on top of cooled cake; refrigerate.

Makes 16 servings.

Watkins Recipe - Coffee and Spiced Glazed HamCoffee and Spice Glazed Ham
  • 1 fully-cooked dinner ham steak (about 2 lb/908 g)
  • 3/4 cup/180 ml brewed regular blend coffee
  • 1/3 to 1/2 cup/80 to 125 ml brown sugar, to taste
  • 1/2 tsp/2.5 ml Ginger
  • 1/2 tsp/2.5 ml Watkins Cinnamon
  • 1/4 tsp/1.2 ml Allspice
Preheat oven to 350 F/180 C. Trim fat from ham and slash edges to prevent curling. Place ham in roasting pan; set aside. Combine remaining ingredients in small saucepan; cook over low heat just until sugar is dissolved. Baste ham steak with some of the sauce. Bake for 50 to 60 minutes, basting occasionally with additional sauce. Remove ham steak from pan; cut into serving-size pieces and place on serving platter. Heat any remaining Coffee and Spice Glaze and serve with ham.

Makes 8 servings.

Watkins Recipe - Easy Baked ApplesEasy Backed Apples
  • 3 medium baking apples such as Rome Beauty of Pippin
  • 1/4 cup/60 ml butter or margarine
  • 2-1/2 tbsp/37.5 ml brown sugar
  • 1-1/2 tbsp/22.5 ml all-purpose flour
  • 2 tsp/10 ml Watkins Cinnamon
  • 3/4 tsp/4 ml Nutmeg
  • 1/2 tsp/2.5 ml Ground Cloves
  • 3/4 tsp/4 ml Ginger
  • 1/4 cup/60 ml chopped walnuts
  • 1/4 cup/60 ml shredded coconut
Rinse apples, pat dry; set aside. Prepare filling by melting butter in saucepan. Add sugar, flour, cinnamon, nutmeg, cloves, and ginger. Heat until mixture bubbles; remove from heat and add walnuts and coconut. Halve apples, core, but do not peel. Place in oven-proof dish. Fill holes with filling, mounding slightly. Bake at 350 F/180 C for 35 minutes or until apples are tender. Serve warm with Cinnamon Ice Cream (below) or whipped topping flavoured with Watkins Vanilla.

Makes 6 servings.

Cinnamon Ice Cream:
  • 1 pint/500 ml vanilla ice cream or ice milk, softened
  • 1/2 tsp/2.5 ml Watkins Cinnamon
    Beat together ice cream and cinnamon until smooth. Keep in freezer until serving time.
