Everyone loves to eat, but not everyone knows how to cook.  We believe that if you know the basics of cooking and if you know your way around the kitchen, you'll not only become a great cook, but you'll love it, too!  We hope this section is one that you and the young "chefs" in your life find fun and easy to use every month!



Vanilla Ice Cream
 
This recipe is great for those who don't have an 'official' ice cream maker - plus, you can choose any flavour of Watkins Extracts for a whole summer full of mmm, mmm good!


Ice CreamIngredients you will need to make 6 cups/1.5 liters of ice cream:
  • 1/2 cup/125 mL egg substitute
  • 1 can (14 oz/397 g) sweetened condensed milk
  • 2 tbsp/30 mL water
  • 4 tsp/20 mL Watkins Vanilla Extract
  • 2 cups/500 mL heavy whipping cream, whipped
Instructions:
  1. In a medium bowl, combine the egg substitute, condensed milk, water and Vanilla Extract.
  2. Fold this mixture into the whipped cream.
  3. Put into a plastic container, cover and freeze for at least 6 hours or overnight.
Tip!How do you 'fold' in ingredients? ... Folding is a term that means that you are combining a delicate mixture (like whipped cream) with a heavier mixture (like cream cheese).  A whisk or a rubber spatula is usually used in an over-and-under motion.

Creamy Fruit Dip

This rich and creamy dip is easy to make and a perfect way to dress up fruit on a hot summer day.  You can even try new and exotic fruits like kiwi or star fruit!

 Ingredients you will need to make 1-1/2 cups/375 mL:
  • 1 package (8 oz/227 g) cream cheese, softened
  • 1 container (8 oz/227 g) vanilla yogurt
  • 1/2 cup/125 mL honey
  • 1 tsp/5 mL Watkins Vanilla Extract
  • 1/2 tsp/2.5 mL Watkins Cinnamon
  • 1/2 tsp/2.5 mL Watkins Nutmeg
Instructions:
  1. In a medium sized bowl, beat the cream cheese with an electric mixer until smooth.
  2. Add the remaining ingredients and keep mixing until it is all well-blended.
  3. Cover and refrigerate for at least 1 hour to allow the flavours to develop.
  4. Serve with fresh fruit dippers.
