Watkins Recipe - Summer Strawberry SaladSummer Strawberry Salad
  • 2 tbsp/30 mL honey
  • 2 tbsp/30 mL white wine vinegar
  • 1-1/2 tbsp/25 mL horseradish mustard
  • 1 tbsp/15 mL water
  • 1/8 tsp/0.6 mL Watkins Black Pepper
  • To taste, freshly-ground Watkins Coarse Sea Salt
  • 4 cups/1 L Bibb or butter lettuce leaves
  • 1 cup/250 mL fresh strawberries, stemmed and halved
  • 1 small red onion, sliced and separated into rings
Whisk together honey, vinegar, mustard, water, pepper and salt. In salad bowl, arrange lettuce, strawberries and onion rings; drizzle dressing over all. Serve immediately.

Makes 4 servings.

Watkins Recipe - Cinnamon Strawberry ShortcakeSimply Sweet
Cinnamon Strawberry Shortcake

  • 2 cups/450 mL all-purpose flour
  • 1/4 cup/60 mL sugar
  • 1 tbsp/15 mL Watkins Baking Powder
  • 1/2 tsp/2.5 mL baking soda
  • 1/2 tsp/2.5 mL Watkins Cinnamon
  • 1/2 tsp/2.5 mL orange peel
  • 1/2 tsp/2.5 mL salt
  • 1/4 cup/60 mL butter
  • 1/4 tsp/1.2 mL Watkins Original Double Strength Vanilla Extract
  • 1 1/4–1 1/2 cups/310-375 mL heavy cream
  • 1/4 cup/60 mL walnuts, chopped (optional)
Preheat oven to 400 F/200 C. Mix together flour, sugar, baking powder, baking soda, cinnamon, orange peel, salt and butter. Stir in vanilla, cream and walnuts. Drop on baking sheet using a 1/4 cup/60 mL measuring cup. Brush with butter and sprinkle with sugar and cinnamon, if desired. Bake for 15 to 20 minutes or until brown. Cool shortcakes and cover with strawberries and whipped cream.

Sweetened strawberries:
  • 4-6 cups/1 to 1.5 quarts strawberries
  • 1/4 cup/60 mL sugar
    Hull and quarter strawberries, toss in a medium bowl with sugar, let stand at least 20 minutes.

    Makes 12 biscuits.

    Watkins Recipe - Strawberry TartsStrawberry Tarts
    From Watkins Cookbook, 1936
    • 6 individual tart shells
    • 1/2 cup/125 ml milk
    • 1/4 cup/60 ml sugar
    • Little salt
    • 1 cup/250 ml flour
    • 1 tbsp/15 ml flour
    • 1 egg, well beaten
    • 1 tsp/5 ml Watkins Baking Vanilla
    • 1/4 cup/60 ml whipped cream
    • 1-1/2 cup/375 ml strawberries (chopped)
    • 1/2 cup/125 ml currant jelly

    Mix all ingredients thoroughly. Cook custard. Cool. Add whipped cream. Fill baked pastry shells. Top with berries. Add melted jelly, spriinkle with shredded coconut if desired.

    Makes 6 tarts

    Watkins Recipe - Strawberry BreadStrawberry Bread
    From Watkins "The Main Course" Cookbook, 1980
    • 3 cups/750 ml flour
    • 2 cups/500 ml sugar
    • 3 tsp/15 ml Watkins Cinnamon
    • 1 tsp/5 ml baking soda
    • 1 tsp/5 ml baking salt
    • 1-1/4 cups/310 ml salad oil
    • 4 eggs
    • 2 10-oz/284-g packages frozen strawberries (or the equivalent weight in chopped fresh strawberries)
    • 1-1/4 cups/310 ml chopped pecans

    Mix all ingredients together. Bake at 350 F/180 C for 1 hour, 15 minutes, in greased loaf pans.

    Makes 2 loaves.

    Watkin Recipe - Strawberry MousseStrawberry Mousse
    From Watkins "The Main Course" Cookbook, 1980
    • 2 cups/500 ml strawberries
    • 1/2 cup/125 ml sugar
    • 1/8 tsp/0.5 ml salt
    • 1 envelope unflavoured gelatin
    • 1/2 cup/125 ml cold water
    • 1/2 cup/125 ml boiling water
    • 1 cup/250 ml whipping cream, whipped
    • 2 tbsp/30 ml Grand Marnier
    • 2 tsp/10 ml Watkins Baking Vanilla
    • Whipped cream
    • Strawberries

    Mash the strawberries and sprinkle with sugar and salt. Allow to stand for one hour. Soften gelatin in cold water; add boiling water. Stir to dissolve. Cool. Combine gelatin and strawberry mixture; beat with rotary beater until slightly thickened. Fold in the remaining ingredients. Transfer to an oiled mold and freeze at least four hours before serving. Decorate with additional strawberries and rosettes of whipped cream.

    Makes 8 servings.
