Watkins Recipe - Merry Berry Cheese BarsMerry Berry Cheese Bars
  • 2 cups/500 mL unsifted flour
  • 1-1/2 cups/375 mL rolled oats
  • 3/4 cup + 1 tbsp/195 mL firmly packed brown sugar
  • 2 sticks (1 cup/250 mL) butter or margarine, softened
  • 1 (8 oz/227 g) package of cream cheese, softened
  • 1 tsp/5 mL Watkins Baking Vanilla
  • 1 (14 oz/400 g) can sweetened condensed milk
  • 1/4 cup/60 mL lemon juice
  • 1 (16 oz/450 g) can jellied cranberry sauce
  • 2 tsp/10 mL Watkins Raspberry Extract
  • 2 tbsp/30 mL corn starch
Preheat oven to 350 F/180 C. With mixer, beat flour, oats, 3/4 cup/180 mL brown sugar and butter until crumbly. Set aside 1-1/2 cups/375 mL of mixture, and press remainder on bottom of greased 13 x 9-inch/33 x 23 cm baking pan. Bake 15 minutes, or until lightly browned.

With mixer, beat cheese and vanilla until fluffy. Gradually add sweetened condensed milk until smooth; stir in lemon juice. Spread over baked crust. Combine jellied cranberry sauce, raspberry extract, corn starch and remaining 1 tbsp/15 mL brown sugar. Spoon over cheese layer. Top with reserved crumb mixture.

Bake 45 minutes, or until golden. Cool and cut into bars. Refrigerate leftovers.

Variation: Cut into large squares and serve warm with ice cream.

Watkins Recipe - Five Spice GingerbreadFive Spice Gingerbread
From Watkins "The Main Course" Cookbook, 1980
  • 1/2 tsp/2.5 ml salt
  • 1-1/2 tsp/7.5 ml baking soda
  • 1 tsp/5 ml Ginger
  • 3/4 tsp/4 ml Watkins Cinnamon
  • 1/2 tsp/2.5 ml Allspice
  • 1/2 tsp/2.5 ml Nutmeg
  • 1/2 tsp/2.5 ml Cloves
  • 1/2 cup/125 ml shortening
  • 1 cup/250 ml sugar
  • 1 egg
  • 1 cup/250 ml molasses
  • 2-1/2 cups/625 ml sifted all-purpose flour
  • 1 cup/250 ml hot water

Combine first 8 ingredients and mix well. Gradually blend in sugar. Beat in egg. Add molasses alternately with flour. Add hot water, a little at a time, beating after each addition. Turn into a well-greased, lightly-floured 9x9x2-inch/23x23x5-cm pan. Bake in a 350 F/180 C oven for 55 to 60 minutes or until a toothpick inserted in the center comes out clean. Serve warm or cold, plain or topped with fruit, lemon sauce and/or whipped cream.

Makes 1 cake - approximately 12 servings.

Watkins Recipe - Cheese SoupCheese Soup
From Watkins "The Main Course" Cookbook, 1980
  • 4 small carrots, cut into 1-inch/2.5-cm match sticks
  • 3 celery stalks, cut into 1-inch/2.5-cm match sticks
  • 1-1/2 cups/375 ml chicken broth made from Watkins Chicken Soup Base
  • 2 tbsp/30 ml butter
  • 2 tbsp/30 ml finely chopped onion
  • 1/4 cup/60 ml flour
  • 3 cups/750 ml hot chicken broth made from Watkins Chicken Soup Base
  • 1 cup/250 ml shredded sharp cheddar cheese
  • 1 8-3/4 oz/262 ml can whole tomatoes, undrained, chopped
  • 10 drops hot pepper sauce
  • 1/8 tsp/0.5 ml Nutmeg
  • Salt, to taste
  • 1/4 cup/60 ml dry white wine
  • 1-1/2 cups/375 ml whipping cream, heated
  • Watkins Parsley
  • Popcorn

Add carrots and celery to 1-1/2 cups/375 ml chicken broth in a 2-quart/2-litre saucepan. Bring to a boil; reduce heat and simmer until tender, about 15 minutes. Set aside.

Melt butter in a large saucepan over medium heat. Add onion and sauté only until transparent. Add flour, blend well and cook 5 to 7 minutes, stirring continuously. Slowly stir 3 cups/750 ml hot chicken broth into flour mixture and cook over low heat, whisking constantly until sauce thickens. Blend in cheese and stir until cheese melts. Add tomatoes and undrained vegetables. Season with pepper sauce, nutmeg, salt and wine. Just before serving, stir in hot cream. Garnish with parsley and popcorn.

Makes 8 servings.

Watkins Recipe - Cheese and Date SaladCheese and Date Salad
From "Watkins Salad Cookbook", 1946
  • 2 packages cream cheese
  • 1/2 cup/125 ml nuts, cut
  • 1/2 tsp/2.5 ml salt
  • 1/8 tsp/0.5 ml Watkins Paprika
  • 1 tbsp/15 ml orange juice
  • Grated rind of 1/2 orange
  • 1 lb/450 g large fresh dates
Mash cheese, add orange juice, nuts, orange rind and chill. Remove pits from dates, stuff with cheese mixture and serve on crisp or shredded lettuce. Add French dressing.

Watkins Recipe - Christmas CookiesClassic Christmas Cookies
From "Watkins Cookbook", 1948

  • 1 cup/250 ml butter
  • 2 eggs
  • 1 cup/250 ml sugar
  • 1 tsp/5 ml Watkins Vanilla, Lemon or Almond Extract
  • 1/2 cup/125 ml blanched almonds
  • 2-1/2 cups/625 ml all-purpose flour (sifted)
  • 2 tsp/10 ml baking powder
  • 1 tsp/5 ml Watkins Cinnamon
Cream butter, add sugar then well-beaten eggs, nuts and vanilla. Sift flour, salt, cinnamon and baking powder and mix thoroughly. Roll on floured board, cut in fancy shapes, brush over dough with white of egg. Bake on greased pan in 375 F/190 C oven about 10 minutes.

Makes 2-3 dozen cookies depending on sizes.
