Everyone loves to eat, but not everyone knows how to cook.  We believe that if you know the basics of cooking and if you know your way around the kitchen, you'll not only become a great cook, but you'll love it, too!  We hope this section is one that you and the young "chefs" in your life find fun and easy to use every month!



Seafood Pockets to Go

Putting this seafood salad in a pita pocket is a fun way to eat lunch. Pack some carrot sticks or corn chips to go with your sandwich!

Ingredients you will need to make 6 sandwiches:
  • 1/2 cup/125 ml sour cream
  • 2 tbsp/30 ml mayonnaise
  • 1 tbsp/15 ml Watkins Cucumber Dill Snack & Dip Mix
  • 1/4 tsp/1.2 ml Watkins Lemon Pepper
  • 1 package (8 oz/225 g) imitation crab meat (surimi), coarsley chopped
  • 1/2 cup/125 ml diced celery
  • 1/4 cup/60 ml thinly sliced green onion
  • 3 (6-inch/15-cm) pita pocket breads or 6 halves
  • Lettuce leaves (shredded if you prefer)
Instructions:
  1. In a medium-size bowl, combine the first 4 ingredients and mix them together well.
  2. Add the crab, celery, and onion and toss it all together to coat.
  3. If using a whole pocket bread, cut each into 2 halves.
  4. Place one lettuce leaf or about 1/2 cup/125 ml of shredded lettuce in each half.
  5. Spoon the filling into each half.
  6. To take to school, wrap in plastic wrap and place in an insulated cooler-bag with an ice-pack to keep it cool and fresh.
What is a Pita Bread?

Pita bread is one of the most fun breads imaginable! It is a round, flat bread that is hollow in the middle. When you slice it into two half-circles, you can open each half into a pocket (that is why pita bread is sometimes called "pocket bread"). You can put anything you wish into the pocket for a very handy sandwich. Pita bread comes from the Arab countries of the Middle East, and is popular in Greece.


Garden Salad Cheesewiches

Serve these sandwiches with a hot cup of soup. You can add other toppings such as chopped green onion, green pepper, or sliced green or black olives.

Ingredients you will need to make 6 servings:
  • 1 cup/250 ml (4 oz/120 g) shredded Monterey Jack cheese
  • 3/4 cup/180 ml coarsely grated carrot (peel the carrot before grating if you prefer)
  • 1 medium tomato, chopped (wash the tomato, cut in half, gently squeeze out seeds, then chop)
  • 2 tbsp/30 ml mayonnaise
  • 1 tbsp/15 ml Watkins Italian Seasoning Blend
  • 1 tsp/5 ml Watkins Onion Flakes
  • 3 English muffins, split and toasted
  • Fresh alfalfa sprouts
Instructions:
  1. In a medium size bowl, combine the cheese and the next 5 ingredients; mix them all together well.
  2. Line a 12-inch/30-cm round glass platter with paper towels and arrange the muffin halves on the platter.
  3. Evenly divide the vegetable mixture on top of the muffin halves.
  4. Microwave, uncovered, on HIGH for 3-1/2 to 4 minutes or until the cheese is melted. Be sure to turn the platter a quarter-turn once after 2 minutes.
  5. Top the sandwiches with alfalfa sprouts and serve immediately.

Tip: If you don't have a cheese grater with a bowl below it, grate the cheese onto a piece of waxed paper. It will be easy to lift up and pour into a measuring cup or bowl.


How do you grate or shred cheese?

To grate cheese is to cut it into very fine shreds or pieces using a hand grater or a food processor. Place the block of cheese diagonally on the grater and push in a downward motion. Be sure to do this slowly so you don't slip and cut your hand on the grater!  Smile!



How do you remove seeds from a tomato?

To remove the seeds from a tomato, cut the tomato in half and then gently squeeze out the seeds. The seeds are in a 'jelly' and slip out very easily.
