Fried Ice Cream
This treat is very popular in Mexico and is now making its way north to us!
Ingredients you will need to make 6 servings:
- 2 cups/500 mL rice/corn square cereal combination, crushed
- 2 tsp/10 mL Watkins Cinnamon
- 6 scoops (1/2 cup/125 mL each) nonfat frozen vanilla yogurt or ice milk
- Sugar
- Honey or chocolate sauce, as desired
Instructions:
- Place cereal in shallow pan; mix with cinnamon.
- Quickly roll 1 scoop of frozen yogurt at a time in cereal mixture to coat.
- Place coated scoops on jelly roll pan.
- Sprinkle generously with sugar.
- Cover and freeze until firm, about 2 hours or more.
- Set oven control to "Broil".
- Uncover pan and broil scoops with tops 6 inches/15 cm from heat source for about 30 seconds or until coating begins to lightly brown.
- Serve immediately.
- Top, if desired, with honey or chocolate sauce.
Peanut Sauce for Ice Cream
Mmm, mmm ... like peanut brittle! Ingredients you will need to make 2 cups/500 mL:
1 cup/250 mL dark corn syrup
- 1 cup/250 mL sugar
- 1/8 tsp/0.6 mL salt
- 2 tbsp/30 mL butter
- 1/2 cup/250 mL milk
- 1 tsp/5 mL Watkins Peanut Butter Extract
- 1/4 tsp/1.2 mL Watkins Original Double Strength Vanilla Extract
- 1/2 cup/125 mL chopped blanched, roasted, salted peanuts
Instructions:
- Combine corn syrup, sugar, salt, butter and milk in large heavy saucepan.
- Cook over medium heat, stirring constantly, until mixture comes to a boil.
- Boil gently 3 minutes, stirring occasionally.
- Remove from heat.
- Stir in extracts and chopped peanuts.
- Cool completely.
- Store sauce in covered container in refrigerator.
