The 'Comeback' Phenomenon!

On January 19, 2006, the Philadelphia Enquirer published an article that states, "In the last 20 years or so, Americans have doubled their spice consumption from two to four pounds a person - and the trend appears nowhere near slowing.

The article goes on to state:

"And it's not just in the Philadelphia region. Last year, the Smithsonian Institution added a spice component to its 39th annual Folklife Festival on the National Mall.  And the Culinary Institute of America convened 600 chefs and foodies at its Napa Valley campus last November for its eighth annual Worlds of Flavor conference, with three days of seminars dedicated to spices and seasonings.  A fascination with foods from far corners of the world has played out on food shows, in glossy food magazines, and in restaurants from haute cuisine to fast-food taco joints. That's how Herta Ginsburgs of the Spice Corner in the Italian Market explains the surge.  "Ten years ago people were buying mostly basics - oregano, thyme, basil, parsley and pepper with some curry and mustards.  "Now they are buying a lot of curry, a lot of cumin and coriander. And cardamom, a spice that we used to sit on for a long time - now I can hardly keep up with the demand."  As ethnic groups have increasingly permeated America's cities and suburbs, they have introduced their cuisines and their spices in neighborhood restaurants.  "American tastes have changed incredibly," says Ann Wilder, founder and president of Vanns Spices Ltd., the Baltimore-based firm that many in the food business rate as the country's best source of quality spices.  I can remember when Americans ate only basics like standing rib roast or lamb."  Now more and more people are eating Thai, Indian, and Vietnamese food, to name just a few.  Some consumers, she says, are responding to the antioxidant and other perceived health benefits of spices.  Turmeric, for instance, is deemed a digestive aid and is said to have antibacterial, antiviral properties.  Also, many people are using more spices and less salt for flavor.  But Wilder believes it's the taste for ethnic cuisine that has triggered the explosion in sales of less familiar spices."

  • Cinnamon is often used as an antidote for diarrhea and stomach upset as well as a metabolism booster.
  • Allspice is an aromatic stimulant that helps to relieve indigestion and gas.
  • Garlic - Regular consumption of garlic can decrease blood pressure and cholesterol levels. It also aids digestion and prevents flatulence. Recent research shows garlic to be beneficial in the treatment of diabetes.
  • Turmeric is an antioxidant that neutralizes free radicals and therefore protects against cancer.

  • 1/4 tsp of ground Sage added to a cup of water can help to relieve chest congestion.
  • Instead of heavy cream, use evaporated skim milk.  It can even be whipped like cream when allowed to chill in the freezer until ice crystals form lightly around the edge.  Beat with an electric mixer until soft peaks form; sweeten to taste and serve immediately.
  • The vast majority of calories in grains comes from complex carbohydrates, which should make up about two-thirds of your daily caloric intake.  Grains are also excellent low-fat sources of protein, and supply B-vitamins and minerals.  Whole grains are rich in insoluble fiber (the kind that promotes a healthy intestinal tract), and all grains are good sources of soluble fiber (the kind that lowers cholesterol).
  • Over time, honey can help to relieve the symptoms of asthma and bronchial conditions.
  • Don't store potatoes near apples or eggs - they could alter the taste!
  • Strawberries can destroy many common infectious agents, including the herpes simplex virus.  Because of the high level of pectin (thanks to its deep red colour) they will also help to reduce blood cholesterol!  In a cancer research study, strawberries capped a list of eight foods most likely to lower rates of cancer deaths - those eating strawberries were 3 times less likely to develop cancer than those who ate little or no strawberries!
  • Tea (black or green) has been shown to reduce cavities, destroy bacteria and viruses, lower blood pressure, strengthen capillaries, help to prevent cancer in animals, and retard atherosclerosis (hardening of the arteries)!
  • Tomatoes have been shown to lower the risk of cancer and help to prevent appendicitis!
  • Do you suffer from insomnia?  Try reaching for the sugar or honey!  Milk does not put you to sleep, but just the opposite - it wakes you up!

Kids!Fun for Kids from Watkins Kitchen!

Finger Paints!

These are best when made the same day you use them.  They are perfect for a rainy - Heartor snowy - day project and a delightful and fun way to create very special home-made Valentines! 

Utensils You Will Need

  • Dry and liquid measuring cups
  • Measuring spoons
  • Medium saucepan
  • Wooden mixing spoon
  • Hot pad (trivet)
  • 4 (or more) plastic or paper cups

Ingredients You Will Need:

  • 1/2 cup/125 ml cornstarch
  • 3 tbsp/45 ml white sugar
  • 2 cups/500 ml cold water
  • Food colouring (see below)

How To Make It

  1. Mix the cornstarch an sugar together in a medium saucepan; mix well.
  2. Add the water and mix a little more. 
  3. Cook over medium heat, stirring constantly, until mixture begins to boil and thicken.  This takes about 5 minutes. 
  4. Remove from stove, and set pan on hot pad.  Cool slightly.
  5. Pour equal amounts into plastic cups.
  6. Carefully add a few drops of food colouring (a different colour for each cup); mix well.
  7. Use your fingers to paint on heavy or glossy paper or special finger-painting paper.
How Do You Mix Colours?

Did you know that you can make a million different colours, starting with just three - red, blue, and yellow?  These are called 'primary' colours.  How do you make different colours like orange, green and purple from these primary colours?  The following are some examples:

Orange:  Use 2 drops of yellow and 1 drop of red; mix well.
Green:  Use 3 drops of yellow and 1 drop of blue; mix well.
Purple:  Use 3 drops of red and 1 drop of blue; mix well.

These are just a few examples, but you can try all kinds of different combinations to come up with all kinds of exciting colours - your imagination can create a rainbow of colour!
